Baked Cauliflower and Mushrooms

| Ingredients: |

3 cups (1 lb) cauliflower florets |
|
1 cup (4 oz) fresh mushroom, chopped |
| |
1/2 cup red onion, chopped |
|
1 TBL olive oil |
| |
2 tsp lemon juice
|
|
2 tsp cider vinegar
|
| |
1/2 tsp salt |
|
1/4 tsp pepper |
| |
2 garlic cloves, finely chopped |
|
1/3 cup green onion, chopped |
|

| Preparation: |
|
Heat oven to 350ºF. Spray square baking dish, 9x9x2 inches, with cooking spray.
|
Mix all ingredients except green onions. Spread evenly in baking dish.
|
Bake uncovered 40 to 45 minutes, stirring occasionally, until vegetables are tender and golden brown. Sprinkle with green onions.
