Watercress, Red & Green Leaf Rice  
Ingredients:  
  1 Tbsp. olive oil   1 clove garlic, minced
  1 1/2 c. watercress, chopped   1 c. arugula, chopped
  1 c. long-grain rice, cooked   1 1/2 c. radicchio, julienned
  1 Tbsp. fresh Italian parsley, chopped  
   
Preparation:  
Heat oil in a large skillet over medium heat. Saute garlic, watercress, and arugula for 3 minutes or until wilted slightly.

Add rice and remaining ingredients to skillet until heated. Season to taste with salt and pepper.

Toss well and serve.
