Watercress, Red & Green Leaf Rice

| Ingredients: |

1 Tbsp. olive oil |
|
1 clove garlic, minced |
| |
1 1/2 c. watercress, chopped |
|
1 c. arugula, chopped |
| |
1 c. long-grain rice, cooked
|
|
1 1/2 c. radicchio, julienned
|
| |
1 Tbsp. fresh Italian parsley, chopped |
|
|
|

| Preparation: |
|
Heat oil in a large skillet over medium heat. Saute garlic, watercress, and arugula for 3 minutes or until wilted slightly.
|
Add rice and remaining ingredients to skillet until heated. Season to taste with salt and pepper.
|
Toss well and serve.
