Garlic Herb Eggplant Rolls

Garlic Herb Eggplant Rolls  
Ingredients:  
  1 eggplant   3 Tbsp. olive oil
  1/2 c. Italian seasoned bread crumbs   1 (6 1/2 oz.) pkg cream cheese with garlic and herbs
  1 (14 oz.) jar spaghetti or pasta sauce   1/2 c. grated Parmesan cheese
   
Preparation:  
Preheat oven to 350 degrees. Trim both ends from eggplant. Slice eggplant. Soak slices in salted water for 10 min. Drain.

Coat both sides of eggplant slices with bread crumbs. Heat oil in skillet and cook 3 min. per side. Remove from skillet.

Spread each slice evenly with cheese. Roll up and secure with a toothpick. Place in baking dish. Pour sauce over eggplant rolls and bake for 15 min.

Serve sauce and eggplant rolls over hot cooked pasta. Sprinkle with Parmesan cheese.
