Garlic Herb Eggplant Rolls

| Ingredients: |

1 eggplant |
|
3 Tbsp. olive oil |
| |
1/2 c. Italian seasoned bread crumbs |
|
1 (6 1/2 oz.) pkg cream cheese with garlic and herbs |

1 (14 oz.) jar spaghetti or pasta sauce
|
|
1/2 c. grated Parmesan cheese
|
|

| Preparation: |
|
Preheat oven to 350 degrees. Trim both ends from eggplant. Slice eggplant. Soak slices in salted water for 10 min. Drain.
|
Coat both sides of eggplant slices with bread crumbs. Heat oil in skillet and cook 3 min. per side. Remove from skillet.
|
Spread each slice evenly with cheese. Roll up and secure with a toothpick. Place in baking dish. Pour sauce over eggplant rolls and bake for 15 min.
|
Serve sauce and eggplant rolls over hot cooked pasta. Sprinkle with Parmesan cheese.
